Put too much sulfite Italian juice

The White is still fermenting have both tank small amounts of nutrients 1 gram per 5 gal. over the last two days.

The 7 Petit Sirah primary fermenters average Ph was 4.05 average now after Tartaric acid addition is 3.63. Should be ready to start fermentation today.

Quite the impressive operation you got over there.

Going from 4.0 to 3.6 I’ve always been hesitant to do. I was all set to do it last year with a 4.0 but then bitched out. Not wanting to shoot my TA level through the roof to target ideal ph.
Many convos been had here on this topic. With all kinds of opinions.

TA should drop during fermentation and malolactic fermentation. The must is very tasty and sweet and no hint of high acid. Just pitched the yeast in 7 primary fermenters we also need off 24 gallons for Rose prefermentation.

We will see how things are in the morning.

Racked the Verdicchio off the gross leas last night. 60 gallon tank was 39 PPM SO2 42 gallon tank was 56 PPM SO2. So far a success. Used pectin enzyme to clear the wine. That will take some time.

Tonight we press 49 lugs of Petit Sirah the fermentation went fast 5 days to -1 Brix. Will post some pics should get about 120 gallons since we bled off about 23 gallons per fermentation for Rose. First time making Petit Sirah will see how it turns out.

Petit Sirah pressed will be ready for MF later this week.
