Will red star primier blanc yeast work for a recipe using strawberries and rhubarb? I also have ec 1118 but id rather use my old yeast first and save my ec 1118 for dragons blood.
 
1118 and Premier Blanc are both Champagne yeasts I believe, they are aggressive yeasts. Why not try RC-212? This is a good 'berry' yeast, anyone else's thoughts?
 
Well. The reason for the two choices is because thats what i have. I could throw the fruit back in the freezer if either one wont work and order somthing else.
 
2 day shipping from amazon. I can still start it today and the yeast will arrive right when i need it.
 
Oh, NP, they'll work, but some of these other yeasts will yield different flavors. (I still STRONGLY advise the Campden tablets before you start.) - sorry, Mixed posts, someone else that I replied to.
