I read alot about you need at least around 12% abv to perserve wine for over a year. So i try to target 12.5% abv to all my batches. My question is if I use sulfites and I know I should and I do how long would that perserve wine that is less than 12% abv, say around 8 or 9 %?
 
I have made Mist wine kits that finish about 7% alcohol, and come with K-meta to add. They have been fine at three years old.

How long do you want to keep your wine?

If I made a large batch,5 gallons, i might would age a few bottles 2 to 3 years just to see how they improve in flavor.
 
With the proper brewint methods and the use of sulfites, wine can be lower than that. 12% is a good all around figure for wine. But alot of the group in here make ciders and meads and those are around 8&-ish I think.

Beer is a bit different, but most of those are around 6-ish, I think preserving beer is different. I don't make it even though I am a "tasting Hall of Fame Member":)
