Preferred method to crafting a pyment?

How do you prefer to craft a pyment:

  • ferment juice and honey separately, then back-blend

Wanted to get a reading on peoples' preferred method to crafting pyments, and why...
 
I don't usually work with pyments but I do make melomels (and that is in principle, the same as a pyment except that I use fruit other than wine grapes) and I sometimes blend the fruit wine with the honey wine; sometimes add the honey to the fruit and ferment them together and sometimes back sweeten with honey... (though the latter would not be a mead as a mead by definition needs the fermentable to be 50 % honey.

Not a pyment.

I usually split a wine kit, use half to make a 5-6 gallon batch (usually dry) around 13-15% with 50% of gravity from each juice and honey, use the other half to make a 3-4 gallon batch of dwojniak style mead at 18-21%, again with 50% of sugars from each source.
