I was looking at some mango juice at the store that I was hopeing to use to make wine, when I noticed on the label that it had potassium benzoate as a preservative in it. They keep it in a cooler with other fresh juices. I am wondering though if this will inhibit yeast growth?

I also saw one with EDTA, and was wondering the same thing.

I am also looking for a mango wine reciepe.

Thanks,
Oxyoke

I would stay away from anything that has potassium sulfate or benzoate in it as it may give you a hard time getting started fermenting. If it's the only thing you can find you could try using campten tablets and Red Star Premiere Curvee yeast. That stuff is pretty robust and seems to be very sulfite tolerant.

I haven't tried it but jack keller's website has a mango recipe. I have had good luck with his stuff.

Good luck!
