Hey there, I made a plum and boysenberry wine last fall and it is very tart. I didn't check acid level cause I don't have equipment for it. I am hoping that it will mellow out a little with time. Any thoughts?
 
Did you back sweeten?
Try adding some simple syrup to glass and see what happens.
 
I will try adding simple syrup to a glass and see how it tastes. My friend said she thought it was just fine but she likes things alittle tart anyway.
 
I feel a little back sweetening will bring the flavor out. Like I said try some simple syrup to a glass and see what you think..
