Making my third batch of Mrs Mann's favorite wine this spring.

I had to bring two bottles for Christmas.

Does this kit improve after 14 months? That’s where my first batch is currently and I don’t want to drink all of it before it’s prime.

I doubt it, but I don't make the topline whites.

I make higher end whites. Yes, they pinnacle at about 18 months.

This being your third batch are you going to try extended maceration on this one? I just ordered this kit for the first time and I'm trying to decide if I should do EM or by the book.

Anyone else do the SLD Merlot by extended maceration? And how did it turn out?

Yep. Though, I'm thinking 4-6 weeks instead of 8-9 weeks.

Most people say the Eclipse kits do but I personally have not seen a big change in my SLM between 12m and 30m which is is currently at. I would note that mine ages I a temp controlled cellar.
