Onion Blossom mead

So I was able to get very cheap raw onion blossom honey and started to make a one gallon test batch.
SG: 1.09ish

So the mead was just racked.
Not bone dry on hydrometer 1.005 tastes a bit sweeter.
Light floral note, hint of fresh onion.
