I have generally stuck to the kit instructions in terms of oak additions and durations rather than by taste. I have a wine that has been bulk aging for about 8 months and I thought the oak was lacking so I added some the last racking. I don’t want to overdue it so wanted to test it weekly.
My question is, will I be able to get a good idea of how oaky it is from a wine thief sample or will I not really know until the next racking when it mixes all up? Or do you try to stir it up first?
