I ended up with SG 0.994 after 3 weeks in secondary fermentation then I Racked it and added Potassium Sorbate + Campden tablet + Degassed it + more juice to sweeten + 15 grams of Hungarian Oak Cubes (MED TOAST) in one gallon jug.

now it's on the third racking since 6-NOV

So.. I have 2 options and I'm confused..

OPTION 1:
Shloud I leave it more and rack it on 6-Jan? (this option will keep oaks for 2 months)

OR

OPTION 2:
Should I rack it on 6-DEC and removing the Cubes and aging for 3 months? (by doing this .. the cubes have sat for only 1 month)

thanks

Yep, 6-8 weeks minimum with cubes. 3 months would ensure complete extraction.

after degassing and clearing, I add 100 grams of oak chips and let age at least 3 months and then rack... taste and then bottle and age if I like the taste.
