newbie needs advice.

I have only made 2 strawberry batches but both went thru several big changes in taste. At one point it was bitter and then it was sour and suddenly it was back to fruity?? Ended up pretty tasty and we finished the last bottle last night. I used 1 lb strawberry for the f-pac and 1 cup sugar (1 gallon recipe). The f-pac made a huge difference.

I cant help but think the distilled water will have an affect on the final taste.
