Hi all, thank for all the advice during my rookie year as a wine maker. I a making a merlot and did a taste just this morning. Seems like is it still on the sour side. I think i did everything right and after 8 months maybe i am jumping the gun. is this the normal side of making wine as I dont have anything to compare it to? I am using glass carboys. If this out of the norm is there a way to fix it? It smells and tastes really good.. Thanks, Paranoid SteveA

Paranoid Steve:

does it taste really good? Or does it taste sour?

I would guess that you did not degas the wine fully.

If you pour a glass, then swirl it around for a few minutes, does the wine taste better? If so, it is dissolved CO2.

de gas?

i know i degassed my kit but this if fresh grapes.. if that is the problem can it be fixed?

de gas!

my merlot doesnt really taste all the great. seems like it smells like it tastes

Steve:

I continue to be confused. Are we talking about one wine or two?

The Merlot is fresh grapes? The Kit is unknown???

CO2 is generated by yeast and sugars. Doesn't matter if it's grapes or a kit.
