Ooh, so much talk about legal limits. I just want Big Brother to know that I only pretend to make wine. If I accidentally do make wine it somehow gets in my canoe and falls overboard in the pond. Darn! With so many boating accidents involving so many different things I'm surprised there's still room for the water.

yes I’ve done many kits with and without skins also frozen must and mead.

I use nitrogen on my carboys.

I like your setup here, can you explain?

Rieslings (from US or Germany) are widely available, so I would use one of those. Honestly, if you are talking about 1 bottle or 2, you could use just about any white wine.
