I have two wine grapes and one table grape (himrod). The two wine grapes are acid, and the himrod is very sweet. Is it possible to mix some himrod in with the two others for balance? If yes, what to do with himrod while I wait for the two later varieties to get ripe enough? Can I keep it in the fridge, or should I let it start fermenting?
 
Just ferment the himrod and wait for others to reach peak ripeness... And then if desired you can blend later in the year to get desired taste.
 
If your desire is to blend them prefermentation to get the BRIX you want, and make acid adjustments prefermentation, why not just freeze the himrod, thaw when the others are ready.
