Quick question about mint leaves. A coworker of mine just gave me a 3ft tall by 3ft wide bush of mint from her garden. I would love to use them in a batch of raspberry wine I am about to start. Ultimately, I want to try making a chocolate raspberry mint port. Any thoughts, suggestions, comments, tips, tricks, etc would be welcome. How much to use and when?

I use around 2-2.5 quarts of loosely packed leaves in a 3 gal batch of lemongrass-mint wine. I do a double steep...bring leaves in water to boil, strain the mint-water into primary, then a second boil for 20 min, strain that mint-water into primary, and just ferment the "tea."
 
Stressbaby, after pulling off all the "good" leaves, I'm left with about a good 2 cups medium packed. If I was to add to say a raspberry wine, would I add during fermentation or afterwards to get a mint flavor into my wine?
