A mead maker, ,,,, do you have a copy of Ken Schram; Mead Maker? This is one of the best references on making country wines with sugar because Ken explains stuff that grape fermenting folks can mostly ignore. ,,, My second model for fruit wines is The Cider Makers Handbook. There is 100% transfer from meads into wine, look and just ask what already exists in this must.
