I started 12 gallons MV Sommelier Select Old Vine Cab Sauv w/Skins on March 29, 2020 in a 25 gallon stainless fermenting pot. I wanted to do an open ferment while it’s still cold enough outside that we don’t have fruit flies yet.

SG was 1.104. Added light chips and heavy chips, Avante yeast, and 4 TBS tannin. Tonight, I racked to two carboys. I was hoping to fill them up, but alas - I’ll have to top ’em up with about a bottle each with some cab I have on hand.

I made this same kit about two years ago and had the first bottle earlier this week. It’s good but surprising light in color - more like a Pinot than a Cab.

All the Master Vintner kits I've done have come out very light in color, like a Pinot, as you suggest. Im curious to hear more about the taste of this one, which I've been considering.
