Least amount of vines required

Hi All,

I have 3 established Merlot vines in the garden (4 years old this year). Last year I only got 1 cluster from each, obviously hoping for a better 4th year yield. Question is... what's the least amount of clusters or vines that you've heard of to jump in and make small amounts of wine?

normally you get one cluster for a spur about 8 inches long and two cluster for a spur 12 or more inches long. one gallon of wine takes 12-15 lbs of grapes. depending on how pruned one vine can give you enough for one gallon
 
We plan on 24 clusters per vine (12 shoots, 2 clusters per shoot) on our head trained vines. Depending on varietal we get 5-10 pounds per plant, the average being 7. I plan on 15 pounds per gallon of wine and happy when I get more wine than expected.
