Hi All
Recently started a Le20 Torrontes Muscat wine kit. The kit says fermentation should be complete after 14 days and to rack into another carboy and add the stabilizer. I have a SG reading of 0.990 after 7 days so am assuming fermentation has finished. Would it be better to leave it anyway for the full 14 days or move onto the next stage early?

Any help would be appreciated.

I would rack it to a carboy and under airlock, but let it sit for a few more days to ensure that fermentation is totally complete.
Thanks for your comment. Is that not the same as just leaving it where it is for a few more days? Or are there other things to consider?

The headspace in your bucket opens up much more risk than having your wine in a topped up carboy with an airlock.

In general, timelines on kit instructions are really just a 'guideline'. Let your SG drive the decisions.
