Thank you so much for all the info.. i also have stuckfermentation going on here.. checked the pH and it's 2.1.. should I add calcium carbonate and make the pH to 3 or 3.4 and add yeast?
 
Correct, you do not want to add acid blend.

Calcium carbonate will indeed raise the pH. However, you should make small adjustments at a time. It is easy to overdo it. Here is a thread with some information. (GreginND is a chemist.): Calcium carbonate?
Got it.. maybe I'll go with one tablespoon of calcium carbonate .. and check the pH in 2 days of gap.. I'm going to raise it to 3.4 or somewhere .. i guess that would be great
