Read the hygrometer wrong. Starting gravity was 1.075.

That makes a LOT more sense! It's a good initial SG.

Its bubbling beautifully in the air lock.

Might not be what others think is a respected wine, but if fermentation means bacteria wont grow, at least I wont die from botulism from it!

it only matters how you see it ,Period,,, and to mention another thing,,, on bad nights when sleep wont come, i keep a all wooden chair in my wine room,, on those sleepless nights, i go to my wine room to watch and listen to my airlocks bubble, it calms my mind, and gives me a peace of mind, in a little while I'm back to bed sound asleep.
