When I buy juice in buckets, the cover has a small black button on top and when pressed, let’s the gasses escape. Something the vineyard installs for transit when juice gets jostled about. I usually do my primary ferment in this bucket with a lose cover and a k-meta soaked towel draped over the top. After five days or so when primary calms down, could I leave the wine in this bucket to finish for another 10 days before racking to a carboy if I snapped the lid shut? It forms an air tight seal. Would I need to install a rubber gasket and airlock, or would the button that is already there do the trick? image.jpg
 
have to agree with cmason on this
however, I normally rack after primary to get rid of all those lees
then after 2 more weeks rack into a carboy.
