when making wine from the fresh juice buckets, after ferminting is complete how long should you wait to bottle of racking? assuming you have already racked a few times to clear the sediment on the bottom. also if wine has sat in the carboy for 8 months and you have racked a few times should you add anything before bottling?

yes i did add potassium metabisulfite once. do you think it should be added before bottling?
 
thanks will do. i understand that the ph is already adjusted in box kits, but what about our fresh juice buckets?

Check with your vendor. Some are, and some aren't. Even if they tell you it has been balanced, I'd test just to be sure.
