Good afternoon, everyone!

I just started a 3g batch of Joe's Ancient Orange.

The recipe is really counter-intuitive, but I'm following it to the letter.

So, after several months, it will clear on it's own... then re-rack and bottle? I'm assuming that I should sorbate if I want to back-sweeten?

I doubt you'll need to sweeten. The bread yeast poops out and leaves some sweetness behind. Mine is over 2 yrs old now and very smooth and nice. My fruit never dropped, so after some time, I just removed it.

It's a fun experiment!!
