I need six gallon carboys but could I use fermonsters instead

Isn't there too much headspace in a 7.5 gallon fermonster for a 6 gallon kit. Also, can you age in a fermonster.

After reading some reviews, I now am wary of the fermonsters.

WHY ? Unless you are concerned about the material it's made from. You want plenty of headspace during fermentation.

I think there might be enough space for fermenting, but to much for long term aging. If I had one, I would only use it for wine I intended to do an extended maceration with, after initial fermentation. And I wish I had one.

Great for EM, I own 2. All my aging is done in glass (or a barrel)
