How much fruit for this?

I have adapted a recipe for feijoa wine from 4.5l to 23l, it makes it 10kg with skins on, I have 10kg with skins off, I can use the lot cant i? Wont it just make it fruity and tastier?
Should I add raisins and tannin, not sure if it calls for those as Im not in front of my pc at home where my receipes all are.
