With me being new to this venture and learning with every batch, I've been wondering.
How long will my blackberry last with no sulfites added to it.
I started making wine because of an uncle who made wine and some other ventures and would talk about it.
Then I found this great forum and the helpful people on it.
So now I understand a little more than in the beginning.
How long is my blackberry going to be okay. 6 months, a year or so. Or should I just go ahead and drink it being I like it and then worry about the next batch aging.

I go with drinking it all and starting a new batch right away:) :) :). answer is : I don't know for sure.

There are two problems when no sulphite is added to a wine.

a) spoiling.
Bacteria or fungus might invade the wine and spoil it

b) oxidising
Air might get to the wine and it might oxidise

So the wine will be fine as long as both do not happen.

There is no time schedule for that. In fact a wine
without sulphite might last a long time.
If bottles were cleaned well, normal sanitation was practised.
Acid levels are at the right mark and there is enough alcohol in it
(at least 11%) then your wine might last even a few years.

In france there is a bunch of professional winemakers who
never add sulphite to their wine, but they are an exception.

No way in telling.
Tasting regularly might give a clue.

Still think he should drink it all and start a new batch right away, sounds like more fun my way

Thanks for the info..
I've often wondered would wine makers did years ago with out all the equipment and chemicals that are available today.
I guess, drink what was good and then sell what wasn't to some poor soul. :)
