How do you know when ready to bottle?

i had 8 x 15gal demijohns last year and i decided to botlle one of them each month to try and figure when the best time to bottle was. I found the wine bottled in Aug (10 months) and later def had a noticeable difference. Im planning on waiting to bottle most of this years until Aug.

Thanks for sharing this. Direct experience from a well thought plan is a great help.

Of course, this doesn't mean that someone else won't get different results, but it provides a baseline to start from.
