Me again, about my first batch, a one gallon strawberry. I just need someone to tell me that this is not abnormal. Here's the whole timeline:
Day 0: mixed all ingredients except yeast. Covered and let stand.
Day 1: pitched yeast - 1.065
Day 2: opened and stirred - 1.055
Day 3 - AM: opened and stirred - 1.035
Day 3 - PM: opened and stirred - 1.015. Added 1/2lb sugar
Day 4: Opened and stirred - 1.005. Removed fruit bag.
Day 5: opened - 0.995. Racked into glass.
Day 6: Airlock going strong, lees adding up at the bottom.
Day 7: no change
Day 8 (today): noticeable clearing, lees buildup over an inch.
Does this sound right? One week from yeast pitch to starting to clear in glass?? Everything looks fine and the readings were correct, just seems REALLY fast.
