Hi everyone!

After years of talk I have finally purchased some wine making equipment!
Going to start with an elderberry wine and then hopefully a blackberry wine.
All berries grown in our garden!

Seems like I have a good bit of reading to do before I get started!

* Jack Keller is the web expert with a recipe for everything. As a newbie I would follow a recipe since it will be built to put things together in a way that copies the sugar (alcohol) in wine and you can be successful without lots of test equipment.
* my favorite elderberry is to use concord juice instead of water to add aromatics and fruit acids/ yeast nutrition and balance the tannic flavors. If you are reading here we tend to have dealt with the green goo. ,,, I finish mine sweeter as 1.005.
* I have not grown blackberry, so others chime in. I live with the freezer and still have raspberries or rhubarb waiting, and an at the point where I am collecting crab apples for tannic flavor notes. As a cook I ask what flavor is missing and may add 2 oz of berry juice for color or 30% rhubarb juice to put acid in a low acid fruit.
