CO2? Possibly. I had that happen to wine in bulk storage for a year, went in the wine room and a bung jumped off. It was degassed a few time. My guess was the change in temps expanded the wine pushing the bung out. Was yours filled to the tippy top or at the neck? Humidity and atmospheric pressure can have a strange effect on some liquids.
