I have newly planted Pinot Noir grapes and my fruiting wire is at 31 inches and the tips are approaching the fruiting wire so it's time I should be thinking about head training them but I'm a bit confused on if I should be doing this. The shoots are not pencil width so not sure if I should be head training them. I've attached a photo that shows what they look like. If I should be head training where should I be making the cut? I've read that the cut should be right through the node but these are not wide enough so not exactly sure where that cut should be made. Thoughts?

if young vines I assume the first year. let them grow the intent is to develop root growth the first year establsih any trellis trining when pruning the grapes in the second year before growth starts again in spring.
