Hello,

I am about to bottle my white wine at a large bottling facility. I was asked the S02 and C02 levels I want at bottling. I have answered the SO2, but I am confused about the C02 question. Is this in case the wine has too much
CO2, they will add nitrogen to remove to a desired level. Does anyone know what is a desired level for C02 in White wine?

I also am confused. For a still wine you wouldn't any remaining CO2.

This is kinda a weird situation. Why are you taking your wine to a facility to bottle it?

I'd be asking the bottling company what they are talking about...that way there's no confusion and who knows what you'll learn. You're paying them for a service so they shouldn't have a problem explaining anything you have questions about.
