I am just finishing a La Bodega Port kit myslef. I was afraid becuase I got two bags of sweetener to add to it. One thing that caught me off guard was one bag looked like grape juice (very sweet/sugary) The other bag was VERY VERY sugary. In fact I had to squeeze it out of the bag like frosting into the port.

George contacted MM about this and they said it was becuaes the bag may have gotten down to 0*C. They said to add it and not to worry. I've had a few ports in my time and never had one this sweet.

I fortified the port with Brandy and Everclear to get teh ABV up to about 20%. Now when I try the port it is almost sugary. The SG tests at 1.060. Cany anyone tell me what thier SG is on the La Bodega Port kit?

Mine only came with 1 F-pack, but that was last January. I found this port to be sweet, but not icewine sweet! 1.035 seems to ring a bell for my finished SG. I'll measure again next time I open a bottle.

I spoke to our quality control specialist, Matteo Meglioli, and he informed me that he had spoken to George about this problem and we were confused to know if it was you George was referring to. In any event, I forwarded your e-mail to Matteo and he told me what went wrong.


The small bag of essence shouldonly been added at the end of fermentation just before filtering, as per instruction sheet. Now the base of the essence is sugar with other acid and mineral, the brix in that kind of product is really high and if during the transport the temperature drop until around 0 C you can have the solidification of part of the sugar, this will not affect the final taste of your product. I recommend to dissolve the excess sediment well and inside the already wine from the kit.


Also, to answer your other question, our port kit does yield a sweet wine but I do respect the fact that you felt it was too sweet and can understand exactly what you mean.


I hope this helps shed some light on this situation in further detail.

I am still very curious to the normal ending SG of this port kit?

I wonder, too how one bag could be so affected and the other not. I really have never seen an addition/essence bag on a port kit that is that thick.

I guess when you make half a million kits there may be a 'hickup' occasionally. Other than that I have been very impressed with the kit up to that point. The raisins were great, and the wine tasted very good before adding the essence bags.
 
I don't have anything to add to this thread other than this is the next kit I plan on doing once I get the wine making fired back up since I finally got moved. What I really wanted to add is I am really thrilled we have factory reps on here from Mosti to answer the technical questions that can't really be answered with confidence since these kits are new to our group. A big thumbs up to Mosti Monidale for taking the time to drop in here to assure our product experience is pleasurable!

I passed your question on to MM and here is there reply.


"I was discussing with Mark in merit of this!

You CAN NOT measure the Sg for wine product because the sg is a physical number correlated to the solution, in our case there is all the components of the wine, ALCOL included that can change between different kit of same batch(we use sg just to have an idea on the fermentation process).
On wine you have to test the RESIDUAL SUGAR if you want to compare different kit.
The MM Port kit (STYLE!!!!!!!!!!!!!!!!!) should have, after the addition of the essence, a content of 140 gr/lt of sugar (approximately the same that you have in commercial port, ice wine or dessert wine)

Now the real port is made in a total different way because there is not sugar added and the winemaker ménage how to work with high sugar juice, how and when stop the fermentation with what and at what % of alcol.

Not all our customer have this knowledge in wine making, and we can not sale alcol to raise the % up to 20, but from the laboratory result we saw that after fermentation we are close to 15 (without stock fermentation).

If the reading of your customer is around 1.060 whits a big margin of error I can say that the wine has approximately 130 g /lt.

I don't see anything wrong in the sugary test because is what we want to have from that kit but if you want to be sure you can always send me a sample (ask at the reception our fed-ex account)."

Wow, okay, with that said, I measured last night, erroneously based on teh above, and I got 1.054 as a SG on my finished port. That is about as sweet as my icewines, but I've not noticed it being overly sweet. Looks like you are right on target Ryan.

Just got off the phone with George and amoung other items ordered a La Bodega, Port. Looking forward to getting this one going. Hope that y'all keep posting because I love all the information I can get.

If I suggest anything with any port from now on, it will be:

Add essence pack to taste. Add a little, stir, taste, add more until taste is desired. I believe if I added less of the sugar I would have been satisfied with this kit.

Same here. I went ahead and ordered one myself. It will be a new experience for me making this type of kit as well. I really look forward to it as well as expanding my wine making experience.

Add me to the list. I'd been thinking about one for a while but after reading this here and trying several over at Messina Hof last week I had to jump in. Now I just have to wait for my brother to pick it up on his way here for Easter as he passes George's store.
 
Please take plenty of pictures and post them for us all to see. I will do the same.

I just stabilzed it on Monday and even without the sweetening pack, it tasted wonderful. I could bottle it right now and be happy. Can't wait to see what happens as I fortify and add the flavoring pouch!
