Hail damage, split berries survival and risks involved

Hello all vineyard managers and wine makers. HAIL!!

I am managing a vineyard in Midlands England and we have had some hail damage. About 1 out of 40 bunches have 2-5 berries split by the hail. We have a high botrytis risk this year and I would like to know if those split berries will survive with regular botryticide applications. Do I risk still trying to ripen the grapes? We sell our grapes to some well known Winemakers. Owners want to know the risk of wheather we pick all now at 14°brix or hold on and keep up the disease control.
