Had some helpers picking Cab Sauv today

I was expecting to get Merlot grapes from a relative who grows several varieties commercially, but he didn't have any left so said I could pick 3 lugs of Cab Sauv or Cab Franc.
I chose the Cab Sauv and my kids wanted to help go pick, so off we went.

My 6 year old actually did awesome, picked a whole lug herself. 8 year old got bored half way through so I had to help her finish up but still lots of fun.

Now time to crush!

All destemmed and crushed, will add in yeast tonight (RC212).

Question, does this look like enough headpace? Or should I split this into 2 brutes. I've never used RC212 before, but its reported to be low foaming. Not sure if the cap will push my lid off.Destem3.jpg

That’s enough head space, same level I fill my fermenters and have no problems. Might think about enzymes if you haven’t already added some.

What’s the BRIX and pH like on those grapes?

My garage is too cold right now, only 13-16C, so I have a space heater beside the brute to try and warm it up. I go rotate it every couple hours.
I'll try to grab a photo next time, but it's cool to see the "warm" side has more of a cap/foaming than the cool side.

Great choice. My forum name says it all, the jealousy runs deep. Cab Sauv runs through my veins! Keep us posted on your progress!
