Hello. I just bought 6 gals of pinot grigio juice from a California vineyard. It came refrigerated. I left it set in the original pkg till up to room temp. When I opened it, it looked top me to be fermenting already. it was for lack of better terms, boiling and very effervescent. I also bought 6 gals of cab and the juice was still when opened. Could the white have been infected?
 
Probably just started fermenting. I'd hit both with ~50ppm of SO2 and wait 24 hours. Then pitch your yeast.
 
Some juice buckets come with yeast all ready added. Ask the supplier.
 
Whether it's natural yeast or pre-added yeast shouldn't you first add K-Meta (to stop any fermentation), wait 24 hours then pitch yeast?
