Has anyone made a Goji Berry wine from fresh/frozen berries? I have almost 12# of Goji berries I picked fresh and froze, so I think I have enough for a 3 gal batch. The only thing I am missing is a recipe - does anyone have one?

I was considering adding a few ounces of red currants and some passion fruit pulp ( I have about 8 cups saved up) to give it a little more citrus taste. Any suggestions? Add golden raisins or white grape juice to boost the body, maybe?

Well, since nobody seemed to have a recipe - I'm just gonna wing it. Assembled today, based on limited previous experience -

11# of fresh-frozen Goji berries
8 cups Passion Fruit Pulp (3.5#)
1 cup - Red Currants (frozen) (6 oz)
1 box (15 oz) golden raisins - chopped
3 cans of Welches frozen white grape juice concentrate.
3 gal of water
Tested sg - 1.030 ph - 4.1
Added -
1 1/2 t pectic enzyme
3 t Acid blend
1 t citric acid
1 t Tartaric acid
1/4 t tannin
3 t yeast nutrient
1 1/2 t yeast energizer
6 1/2 # of sugar
1/4 t K-meta

Starting Sg is now 1.095 ~ ph is 3.4 Must has an interesting taste, almost pineapple-like. Right now it's a deep yellow orange color.
I'll let it sit 24 hours then pitch the SN9 yeast.
