So my first batch (RJS Sangiovese/Merlot) has been bulk aging for exactly a month, aging in heavy toast French oak. I decided to give it a little taste to see how it was developing, and now I'm more happy and excited than ever!
Here are my tasting notes:
Aroma -- Dark berry (blackberry/raspberry), lavender
Tannin -- On the verge of Medium plus
Flavor -- Spice, acidity of a berry, the tiniest bit of sparkle, young oak (which I found a bit odd).
