Kit arrived Wednesday afternoon. Prepared as per directions: added Packet A (assume contains Potassium Meta Bisulfite to retard wild yeast), skins/seeds/oak chip and iSpindel (eHydrometer). Achieved good 1.108 SG, 25 Brix. Prepared yeast starter but didn't realize until Thursday morning (maybe 18 hours later) that I had forgotten to add Packet B (yeast had nothing to eat in starter - just distilled water). Eventually pitched active yeast starter very early Friday morning. Before pitching yeast I happened to look at BrewSpy to check SG on the iSpindel and was surprised to see SG = 1.090. Sure enough, lifted bucket lid and could see lots of activity already occurring. Kit comes with Lalvin yeast. Is it correct to assume that the Lalvin will dominate any wild yeast during the remaining fermentation (starve them out), especially given the starter? Any suggestions for additional precautionary steps to take at this point?

Someone smarter will chime in with more detail, but yeast doesn't need a starter to start. You can go ahead and add your starter to give your yeast more nutrients without any harm done. Also Lalvin is a brand and doesn't tell what kind of yeast it is.
