The other thing after a little simple syrup and perhaps acid is to let it age a while. You will be surprised how much the fruit wine will change at 6 mos. and at 1 year! Fruit flavors become more pronounced and it all blends together more.
 
Hey - what brand from Labelpeelers do you recommend? I need to add some raspberry flavor to my wine in the secondary.

Curious which of the Amoretti product lines do you use for your wines? When are you adding them?

I'd like to do a sparkling Chardonnay....and was thinking about using one of the Amoretti products post fermentation -- in planning stages still.

The Artisan concentrated fruit flavoring which comes in an 8 oz. bottle. I add to the Primary F.
