Carboys were in a warm room until Malo finished. Racked and put the out in the cold wine room. I've had layers on the bottom but never had this.

During the early stages, when I think of it, I give the carboys a 'twist'. Helps to get all that gunk off the sides and down to the bottom, where it seems just a tad easier to deal with.
 
That looks like a good bit of headspace. I like to keep it topped up to one inch or less.
