Carboys were in a warm room until Malo finished. Racked and put the out in the cold wine room. I've had layers on the bottom but never had this.

Photo when placed in the cold room and a week later.

During the early stages, when I think of it, I give the carboys a 'twist'. Helps to get all that gunk off the sides and down to the bottom, where it seems just a tad easier to deal with.

can I ask what the strings in the tops of carboys for? just wondering..

I have toasted oak sticks in the carboys. Drill a hole at the top, put a string through it. Makes it very easy to remove the sticks.

That looks like a good bit of headspace. I like to keep it topped up to one inch or less.

I shoot the headspace with argon just as I put the airlock in. I will top up a little more and remove the oak at the next racking. I always hit the space with argon if the airlock is removed.
