Greetings! Plan is to wash, pit and freeze 20 pounds. My question is can i place the prepped peaches in a straining bag, drop into a sterilized fermenting bucket, cap and freeze the whole thing? I was thinking then all that needs to be done is take it out of the freezer and let it do its thing.

Thoughts please and thank you in advance.

Before freezing you would do well to mash them thoroughly AND add pectic enzyme before freezing. (Add PE again when they are thawed and about ready to pitch the yeast.
Peach wine is often tough to get to clear completely.
 
Well, they were very ripe and cut into much smaller pieces although no mashing. Added pectic prior to and yes, will do after they are thawed. Thank you very much for your response!
