I'm making two gallons of blueberry wine.It is in the the second day of fermentation and I have a 6 gallon demijohn. Do I need to get a smaller demijohn or can I add water and sugar at this stage. I'm worried about the head space with only 2 gallons in the 6 gallon demijohn.

Welcome to WMT!

During the active fermentation stage, the headspace doesn't matter. Eventually, as the fermentation winds down, you will have to find a way to store it in a vessel or vessels without extra headspace.

Thank you, I ordered some 1 gallon jugs. Just wondering, can I add water and sugar to the mix while it's in the first two days of fermentation? I would need to add 3- 4 gallons to the bucket in order to fill my 6 gallon demijohn to get the head space down enough. Trying to figure a way to save it if I don't get the 1 gallon jugs in time.
