Final 2 weeks before bottling my skeeter pee, important ? please,

I'm stabilized, and crystal clear! Yay!

Now I added my sugar and I'm supposed to wait 2 weeks to be sure no more fermentation occurs.

My ? is, because it's downstairs in my wine room. Other than watching for bubbles through the air lock, how can I be certain that no more fermentation occurred.

I'm thinking that if I taste it in 2 weeks and it did indeed start fermenting, it would taste very bubbly again. Just want to make sure since this will be my first bottle of my new religion...I mean hobby.:i and I do NOT need bottles exploding.

My wife allowed me a whole room to myself in my new house for my new hobby and the quickest way to get that taken away is to have bottles blowing up.
 
If you added your sorbate and k-meta you shouldn't have any refermentation however if you did you would see bubbles in your airlock, and sediment in the carboy.
