In just 72 hours using Lalvin EC-1118, my cherry wine went from a 1.090 to a sub 1.000. How is this possible? Fermentation has slowed down drastically since yesterday. I was expecting to rack at 1.020-1.040 but I'm well past that point. Should I siphon to the secondary and fit an airlock now or what?

Your temperature was probably warm and that is a great yeast. I have never had difficulty with it and use it for my whites and fruits. I would check the s.g. again and if it hasn't moved, yes rack it now.

Yea temp have a huge effect on fermentation. I dont like 1118 for fruit wines. I like Cote des Blancs or 1116
