Ok...so I got legit and bought a vinmetric analyzer...was getting near where I hoped to bottle my first grape wine from a bucket...
5 gallon carboy
After adjusting acid I got it at 3.65ph
Did the free so2 titration and came up with 22...
Using 0.8 target molecular for red wine
This is how ferm calc spit out my additional Screenshot_20190624-203330.jpgdoes that look legit 1.12 grams? And the equilibrium constant is supplied?
 
Looks fine...you’re already at 22, and the chart recommends 35 ppm, you don’t need much. For reference, 1/4 tsp of sulfite is right around 2g, so your addition is a bit more than 1/8 tsp in 5 gallons.
 
Nothing wrong with using .8 molecular if you want extra protection, but .5 molecular should calculate to around 35 ppm free.
 
Also, does adding sulphite change the ph slightly? After adding it went from 2.65ph to 3.58....thought that was odd...checked with 2 meters both calibrated ....
