Needed some red wine to deglaze for a beef stew tonight and didn't have much in the cellar I was willing to commit. So I used some of the elderberry, the stew turned out great. Sipping some of the wine now. Very very interesting in a good way at 3.5 months old. Still some aspects of a young wine, tastes nothing like any grape wine I have tasted though, but is full bodied, good depth of flavors I'm still trying to figure out. Really like the mouthfeel. Aroma is strong but very good as well.
 
Mine has an smell that I can only describe as earthy. Not musty, not unpleasant but definitely different than any other wines I’ve made.
