Elderberry is an interesting first post, like most folks my first ferment was a grape wine. Have done 100% elderberry and decided it is better when mixed in with fruit that has more aromatics, ,, and into a fruit which is missing tannic flavors. >>>>> I really like about 75% concord grape mixed with 25% elderberry, and lightly sweetened.

I just finished an elderberry I think it compares favorably with many commercial ones… but I’m starting to think I just don’t like elderberry that much.

Where abouts are you located and what other wines are you interested in?

Think I am with you on the elderberry taste but, stick it back on the shelf for a few years. It tones the taste down and is much better. Arne.
